This wonderful Tex-Mex inspired meal from Lemon Pi Boutique, is the next recipe in our collaboration with the food blogger from Canada.  Every week, she has been testing out our Kankun Mexican Sauce range and coming up with really delicious, interesting and easy to make meals, which can be enjoyed at any time of day.  This Tex Mex creation is no different and could be reheated for lunch or even enjoyed for breakfast with some eggs over easy!

What Is Tex-Mex?

For those of you that don’t know what Tex-Mex is, it is a fusion of flavours and comes from the areas of Texas and Mexico.  Fusion cooking can start in so many different ways and always adds interest to meal times.  Tex-Mex creations have included the fajitas, nachos and the humble chilli con carne which we all love and know today and are always a hit with younger audiences.

Meals Made with Chipotle Sauce

The basis of this meal uses our Kankun Chipotle mild sauce, although you could use the hot version if your taste buds, and fellow diners, allow.  Chipotle sauce really lends itself to being versatile, so even once you’ve used it within the recipe, you’ll soon find yourself pouring it over your salads, fries, mayo and more besides.  Serve this Tex-Mex casserole for brunch if you want to see some very happy faces, along with an iced tea – it’s sure to gain approval from any guest.
