Bharwa baingan is an easy and tasty recipe that is made by stuffing brinjal/eggplant. The stuffing is generally made by a mixture of spice Powder but you can also add powdered groundnut or desiccated coconut to make stuffing of your choice. In this recipe, I have made stuffing with grated potato to give it a twist.

Stepwise recipe to make bharwa baingan:
- Wash the brinjals and pat them dry with a kitchen towel.
- In a mixing bowl, fine grate potatoes.
- Now in the same bowl, add 1 teaspoon red chili powder (lal mirch powder), 1 teaspoon coriander powder (dhaniya powder), 1 teaspoon cumin powder (jeera powder), ½ teaspoon turmeric powder (haldi), 1 teaspoon garam masala powder, 1 teaspoon dried mango powder (amchur), 1 teaspoon ginger-garlic paste and salt as per taste. With a spoon gently mix everything. Stuffing is ready.
- Take 1 brinjal and slit it into four halves without cutting the entire brinjal.
- With the help of your finger or spoon, stuff the slitted brinjal with the stuffing. Repeat the same with all the brinjals. Keep it aside.
- Heat a pan and add 2-3 tablespoon oil.
- When the oil gets heated, slowly put the stuffed brinjals in the pan. Saute the brinjals by stirring it. Cover the pan with a lid and let them cook on a low flame. Check after few minutes and stir so that the brinjals are uniformly cooked. Repeat until the brinjals are tender and well cooked.
- Serve bharwa baingan with roti or paratha.
