Soft and chewy cookies made from a box of Lemon Cake Mix, and filled with chocolate chips and butterscotch baking chips. Each cookie is also stuffed with a chocolate caramel Rolo. Everyone will love the delicious lemon and butterscotch flavors, along with the fun Rolo surprise in each cookie.
The cookie dough is made by mixing a box of lemon Cake Mix with eggs and vegetable oil until smooth. Chocolate chips and butterscotch baking chips are folded into the cookie dough. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Place one Rolo on each cookie dough, and cover with more cookie dough. Bake until the cookies are fully cooked through.
Rolo Stuffed Lemon Cake Mix Chocolate Chip Butterscotch Cookies
Ingredients
- 1 ( 15 oz.) box lemon cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup chocolate chips
- 1 cup butterscotch baking chips
- Rolos
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the chocolate chips and butterscotch baking chips.
- Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Place one Rolo on each piece of cookie dough. Cover with more cookie dough. Bake for 10-12 minutes.
