The cheesecake batter is made by mixing all of the ingredients, except for Oreo cookies together until smooth. Place one Oreo cookie in a paper lined 12 cup muffin pan. Evenly divide the cheesecake batter over the cookies, and bake until they are completely cooked through.
Pumpkin Oreo Cheesecake Cups
Ingredients
- 8 oz. cream cheese, softened
- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1 teaspoon pumpkin pie spice
- 2 large eggs
- 1 teaspoon vanilla extract
- Oreo cookies
Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners and place one Oreo cookie in each cup.
- In a large bowl, mix cream cheese with pumpkin puree, granulated sugar, pumpkin pie spice, vanilla extract, and eggs until smooth.
- Evenly divide the cheesecake batter over the Oreo cookies. Bake for 25-30 minutes.
