Kale and Potato Soup

Quick and easy healthy meal, this Kale and potato soup is filled with tons of kale, potato, and garlic. It is delicious and easy to make. There is very little prep work that you need to make this soup, and you won’t need to blend anything together. It makes a great light lunch or dinner served with a side of bread or salad. 

This soup is made vegan and gluten-free, perfect for any diet. To prepare the vegetables, the kale is first washed and chopped. The potato is peeled and cubed. Place all of the ingredients into a large saucepan over medium heat. Cook over medium heat until the kale has wilted and the potato is fork-tender. Serve with a side of bread or salad.

Ingredients

  • 1 bunch fresh kale, chopped
  • 1 large potato, peeled and cubed
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried parsley

Instructions

  • Bring all of the ingredients to a boil over medium heat. Cook for 20-30 minutes until the kale is wilted and the potatoes are tender.
