Paella on the Lotus Grill

Yesterday South Africa got through to the World Cup rugby final – what a match – our shattered nerves!  We decided to watch this match with friends and what better way to do this by using our Lotus Grill on our balcony.  You might be saying how can you BBQ on a small Hong Kong balcony?  Well you can if you use the smokeless Lotus Grill. Using our high-quality smokeless charcoal, you can grill on the smallest of balconies and even indoors – gone are the days of billowing smoke floating up into your neighbours window.

As we had invited a few avid rugby fans - I wanted to cook something that was interactive and didn’t need much care - I decided to go Spanish – yes nothing South African but nevertheless delicious.  What you will need:

Your Lotus Grill
A Paella dish to fit the Lotus Grill (12inch)
Lotus Grill smokeless charcoal
Lotus Grill gel

Suggested ingredients:

1 and a half litres Vegetable broth
Meat/fish/chicken or Chorizo Sausage of your choice cut into small pieces
1 yellow pepper cut into slices
1 red pepper cut into slices
Mushrooms sliced
1 large onion chopped into small pieces
2 cloves garlic chopped finely
4 tomatoes
1 stick celery
1 tin of peas and carrots
1 tin corn
400g Paella rice or Fideua (Paella with pasta)
Garlic
Cooking oil
1 tablespoon each of; paprika, salt, pepper, rosemary, thyme, turmeric, nutmeg, chili flacks
Handful of coriander, parsley, olives and pepperoncini

Preparation:

Get your Lotus Grill working and then put the Paella dish on the Lotus Grill grid.  Put a little cooking oil into the Paella dish. Then start by frying your onions and garlic until they are golden. Then add your meats (Chicken & Chorizo) and fry until cooked.

Next add the rice/pasta, vegetables and broth.  The broth should cover all the ingredients.

Cover with a lid and let it simmer until cooked through.  Always check that there is enough broth to keep the vegetables and rice at all times moist – do not burn.  You can regular the temperature using the control button.

Duration:  30-40 minutes or until rice is cooked through.

Once ready you your guests can ‘dig’ into a delicious Paella served with a delicious Spanish wine. Easy, fun, healthy and delicious to make – Paella on the Lotus Grill.
