This Mutton masala recipe is a very easy to make at home within an hour. Below you can read the step by step method with photos and video for mutton masala recipe at home.

To make soft, tender and succulent mutton masala, you don't need to wait for long hours. Learn how to cook mutton in cooker easily in a short period of time to impress your family and friends.

In this recipe I haven't used curd( yogurt) to marinate the mutton ( lamb) pieces. You can used it but use a low sour curd. 

As in mutton masala recipe we use tomato, so it can make the gravy more sour. So I prefer to use any one of them while making this recipe. If you like to cook them in slow cooking then it is better to use curd to marinate them.

As you know that mutton pieces needs more time to cook to become soft and tender. Slow cooking is a traditional method for this and it may take more than two hours.

So I love to cook mutton in a pressure cooker to save time. Pressure cooking is a quick and easy method to make a good and taste mutton masala curry recipe at home.

You can make a complete dinner for your family within a hour by using a cooker.

In pressure cooking method it need only 30 minutes to make a soft and tender mutton masala.

Cook them in high heat flame for 15 minutes and then lower the flame to low and further cook for another 15 minutes. Let the steam pass naturally from the cooker. And your mutton masala is ready to serve.

                  Mutton masala




Mutton masala or lamb masala is a little bit spicy curry recipe made with onion tomato gravy. This is a easy mutton masala recipe from scratch. You can cook soft, juicy and tender mutton pieces by using a cooker at home.

Ingredients
  • 500 g mutton pieces ( in bone)
  • 1 teaspoon ginger garlic paste
  • 1/2 teaspoon red chilli powder
  • 1/3 teaspoon turmeric powder
  • 1/2 teaspoon salt
For the gravy
  • 2 medium size onion sliced
  • 2 medium size onion chopped
  • 2 medium size tomato sliced
  • 2 - 3 green cardamom pod
  • 7 - 8 garlic pod
  • 1/2:inch ginger root
  • 1/2 teaspoon cumin powder
  • 1/3 teaspoon corriander powder
  • 1 teaspoon meat masala
  • 1/3 teaspoon turmeric powder
  • 2 green chilli 
  • Small handful of corriander leaves
  • Small pinch of salt
  • 3: teaspoon cooking oil
  • 1 1/2 cup water ( as required)
How to make the recipe

Preparation
  1. Clean and wash the mutton pieces nicely for 3 - 4 times.
  2. Drain and pat them dry.
  3. Marinate with ginger garlic paste, salt, red chilli powder and turmeric powder for 10 minutes. 
  4. Heat 2 teaspoon cooking oil in a deep vessel pan or cooker and fry the onion slices till  light brown.
  5. Remove and cool down completely.
  6. Take the fried onions in a mixing jar and add the garlic pods and ginger.
  7. Blend them into a fine paste using little water.keep them aside to use later while making the gravy.

Making mutton masala

  1. Pour one  teaspoon more cooking oil in the cooker and heat on medium heat flame.
  2. Add the green cardamom pod and chopped onions and fry them till light brown.
  3. Add the turmeric powder, cumin powder, corriander powder, meat masala, salt and green chili.
  4. Fry them for 30 seconds and then pour 2 - 3 teaspoon water and fry them.
  5. Pour the fried onions paste and cook them for 2 - 3 minutes or till the raw smell of ginger garlic goes off.
  6. Add the tomato slices and fry till they become messy.
  7. Now add the mutton pieces and mix well with the masala.
  8. Cook them for 2 minutes to release its juice.
  9. Pour one and half cup of water into the mutton masala and then pour some chopped coriander leaves. 
  10. Close the lid of the cooker and cook.
  11. Cook them in high flame for fifteen minutes and then lower the gas flame to low and further cook for another 15 minutes.
  12. Switch off the gas flame and remove the cooker and let the steam pass naturally.
  13. After that open the lid and serve the mutton masala topping with soame corriander leaves.

         Serving tips
  • Mutton masala is best to serve with roti, naan or paratha.
  • My favorite is with a plate of steam rice and homemade chapati.
          Recipe notes
  • You can cook the mutton masala in slow cooking but it will take more times to cook properly.
  • I prefer to cook mutton in a pressure cooker as it gives perfectly cooked soft and juicy pieces.
  • You can use curd in the marination as well but don't use a sour curd. As we are using tomato so the gravy may become more tangy.
  • For me use any one either the curd or tomato.

Preparation

1. Clean the mutton pieces nicely for 3 to 4 times or till the water run clear from bloods.



2. Drain and pat them dry completely using a kitchen towel or paper.

3. Take them in a mixing bowl and mix with 1/2: teaspoon ginger garlic paste, red chilli powder, turmeric powder and salt. Let them marinate for 10 to 15 minutes.



4. You can add curd or yoghurt in the marination as well.

5. Heat 2 teaspoon cooking oil and fry the onion slices till light brown.



6. Remove them and cool down completely.

7. Mix 7 - 8 garlic pod and roughly sliced 1/2 inch ginger root with the fried onions.



8. Pour little water and make a fine paste using a mixer or grinder. Keep the paste aside to use later while making the mutton masala gravy.



Making the masala

1. Pour 1 teaspoon more cooking oil in the cooker and heat.

2. Add the green cardamom pod and chopped onions and fry till the onions become light brown.



3. Add the cumin powder, coriander powder, meat masala, turmeric powder,green chilli and salt. Fry them for 30 seconds.



4. Pour 2 - 3 teaspoon water and cook the masala. Then pour the onion paste and mix well with the masala.


5. Cook for 2 - 3 minutes or till the raw smell of ginger garlic paste goes off.

6. Add the tomato slices and fry till they become messy.



7. Now add the mutton pieces with the gravy masala and cook for 3 to 4 minutes to release juices from the mutton pieces.




8. Pour one and half cup of water and mix everything nicely.

9. Add small amount of chopped coriander leaves and close the lid of the cooker..



10. Cook them in high flame for 15 minutes and then lower the gas flame to low and further cook for another 15 minutes.



11. Remove the cooker and let the steam pass naturally.

12. Open the lid and serve the mutton masala topping with some chopped coriander leaves.
