Before preparing the original Lauki Ki Sabzi Recipe, remember some important tips and suggestions. First of all, wash and clean the lauki and diced in a medium-sized cube. The size should be appropriate otherwise it will dissolve with sauce immediately. Secondly, you can also prepare the dry form of this recipe without any onion and tomato. Some really like this kind of dry lauki ki sabzi but it is fully optional. For a creamy version, add cashew nuts paste or add some fresh cream when the dish is completely ready. Add cream according to your taste and add more if you want.

Ingredients:
1 kg lauki | kaddo | bottle gourd
(After peeling and removing inner parts, it will remain ½ kg (500 grams)
1 piece bay leaf
1 large onion, chopped
2 tbsp cooking oil
1 tsp kasuri methi
1 medium-size cinnamon
½ turmeric powder
½ coriander powder
¼ tsp all spices powder /gram masala
1 tsp cumin seeds | jeera
½ tsp garlic paste
½ tsp ginger paste
1 tsp red chili powder
2 tomato, finely chopped
1 cup of water
Salt to taste
2 tbsp fresh coriander, chopped

Preparation Method:
Take a large wok (Kadai) put on medium flame, add 2 tablespoons cooking oil in it. Now add bay leaf and sauté, add cinnamon stick, cumin seeds, and kasuri methi and keep mixing until you get an aromatic smell.
Include finely chopped onion, ginger and garlic paste and saute until it gets pinkish color.
Now, add turmeric powder, chili powder, coriander powder, and salt to taste.
Keep stirring on a low flame until it becomes aromatic
Add finely chopped tomato and keep mixing until it becomes soft and syrupy.
Include bottle gourd pieces (lauki or kaddo) and keep mixing for two minutes.
In the last, include 1 cup water and combined well.
Use the lid to cover and cook for 15-20 minutes on medium-low flame or until bottle gourd (lauki or Kaddo) are tender or well-cooked.
Open the lid of the wok, check and adjust the consistency. If you need more curry, add water as required.
Finally, add all spices powder (garam masala) and chopped green coriander. Combine it well.
