In South Indian cuisine, a lot of dishes are incomplete without tamarind and tamarind leaves are mainly used in preparation of curries, rasam, chutneys and dal/lentiles. 
A pickle or chutneys made with tamarind/ imli leaves is very popular dish.

Tender Tamarind leaves have a sour flavour and for this recipe fresh form of leaves are more preferred.

Ingredients Required for Chinta Chiguru iguru / Tamarind Leaves Curry Recipe:


1.      Tamarind Leaves
2.     Onion
3.     Green chilies
4.    For Tempering:
·       Oil
·       Jeera
·       Mustard seeds
·       Urad dal
·       Red chilli - 1
·       Hing - a pinch
5.     For Seasoning:(Quantity according to the taste)
·       Salt
·       turmeric powder
·       red chili powder


Ingredients Required for Tamarind Leaves Curry Recipe

Preparing of Chinta Chiguru iguru / Tamarind Leaves Curry Recipe :


1)     In a kadai, heat 2 spoons oil, for preparing the tempering/tadka add Jeera, Mustard seeds, Urad dal, Red chilli, hing.

2)    To that add onions and green chilies and fry till onions turns translucent.


3)    Once done add the Tamarind leaves to it and mix it.

Add tamarind leaves to tadka

4)   Allow it to cook for a couple or 3 minutes.

Allow it to cook

5)    Now time to season it with spices i.e salt, turmeric, red chili powder.

Add seasoning to the curry

6)   Sprinkle a little amount (i.e around 1 or 2 spoons) of water, to avoid the curry stick to the kadai.

7)    Saute & cook the curry for around 5 - 10 minutes till rawness of the leaves goes.

8)     Time to check the taste and add required amount of seasoning if necessary.

Combine the Chinta Chiguru iguru with hot steaming rice, soft roti or phulka.
