chekkalu | Rice Crackers

Chekkalu (Rice Crackers)

Ingredients:

  1. Cooked rice - 1 cup
  2. Rice flour - 1 cup
  3. Besan/Chickpea flour - 2 spoons
  4. Ginger chili paste - 1 spoon
  5. Curry leaves
  6. Ajwain - 1/2 spoon
  7. Jeera/Cumin - 1 spoon
  8. Sabudana/sago - 1 spoon
  9. Chana dal/Split chickpeas- 1 1/2 spoon
  10. Yellow moong dal/mung beans 1 1/2 spoon
  11. Red chili flakes - 1 spoon
  12. Til/sesame seeds - 2 spoons
  13. Salt
  14. Oil
  15. Water
* Soak chana dal, yellow moong dal, sabudana in water for 1 hour and discard the water from it.
* Mash the rice with hands or with a spoon

Ingredients for chekkalu/ Rice Cracker

Preparation:

1) In a Mixing bowl add cooked rice, rice flour, ginger chilli paste, curry leaves, besan, Ajwain, jeera, red chilli flakes, sesame seeds, salt, soaked saboodana, chana dal, yellow moon dal, 2 spoons of hot oil and mix them well.

Now knead the dough of it by adding required amount of hot water slowly to it.

Check the taste if necessary for salt and seasoning.

2) Heat the oil in the kadai for deep frying.

Tip: To check whether the oil is heated properly or not take a small amount of dough in hand and flatten it in a coin size and drop it in oil(do not drop the dough as a ball because it may pop once going into oil), if it get floated with bubbles then oil is ready to fry.

3) Take a butter paper or plastic sheet or banana leaf and grease it with oil and also apply oil to hands and make a small balls of the dough and press them on the sheet with the help of hand in the required size in a thin round shape.



4) Once the oil is heated then slowly take the pressed chekkalu in hands and drop it into the oil slowly and carefully.



Flip them carefully and occasionally when required with the help of slotted ladle.

Fry them till it turns golden in colour and crispy.

Fry chekkalu in high flame.

Maintain the heat in high to medium flame for making all the chekkalu.

4) Once fried then take them in the tissue paper to remove excess oil and allow it to cool down to normal temperature.

Store them in an air tight container.
