Mango sheera or Mango kesari rava halwa, kesari bath, semolina pudding, sooji halwa, kesari sweet, as they call it, is a mouth melting, mango flavoured Indian pudding with good amount of ghee and lot of dry fruits to make it amazingly delicious.
Halwa is easy and very popular Indian dessert Recipe, prepared specially on Indian festivals and special occasions. This Halwa recipe is prepared with sooji.

While making any ripe mango recipes,use mangoes which are not fibrous and are sweet.

Basically, a smooth & creamy semolina dessert recipesprepared from rava or semolina with ripe sweet mango pulp. it has a  similarity with  kesari bath.
This wonderful mango sweet recipe, with fruity twist, is sure to be enjoyed by every member of the family.



Mango Kesari step by step cooking method




Ingredients for Mango Kesari :

  • Mango Pulp -2 cups
  • Sooji (Semolina/ Rava) -1 cup 
  • Water - 2 cups
  • Sugar  or sugar powder- 1 cup ( or according to tastes)
  • Cardamom Powder (Elaichi) -  1/2 teaspoon
  • Dry fruits chopped - cashew nuts, Almond , raisin
  • Ghee - 3/4 cup
  • 1/2 cup diced Mango

How to make Mango pulp/Mango puree:

Mango pulp recipes- 

  • To begin with, take Ripe Mango, wash under running water and peel them. Chop them, put the same in a blender along with little water.
  • Once done, store the mango pulp/mango puree in a refrigerator. Use it whenever needed.

Tip: The quantity of sugar depends on the sweetness of the mangoes pulp.


Preparation of Mango Kesari :


1) In a small tadka pan melt 1/2 cup ghee. Add the chopped cashew nuts, almond , raisin to it and gently toast them, over a low heat until golden brown and crisp, taking care not to burn them. Turn off the heat, and set the pan aside for later use.

2) Heat the 1/4 of ghee in a heavy bottomed pan over low heat and roast the semolina (rava) gently, until it gets lightly toasted and aromatic. For around 5 minutes.

3) Add  water and sugar to the roasted rava, mix well, cover with a lid and cook on a medium flame for 4 minutes, while stirring occasionally.

Ensure that you are stirring the mixture while pouring the water to prevent the formation of lumps.

4) Once the semolina gets cooked it turn into halwa like consistency.

When ever you feel like halwa is sticking to pan then add 1 or 2 spoon of ghee to it and mix.

5) Now its time to add roasted dry fruits and Cardamom Powder (Elaichi) to sooji sheera (halwa).

6) Next, add the mango pulp to the sooji sheera (halwa) and mix well. Cook the mango sheera (halwa) for about 5 - 7 minutes, stirring occasionally until the halwa stops sticking from the sides of the pan.

I have added 2 spoons of ghee to the mango sheera to avoid burning or sticking it to pan.

7) Turn off the heat and garnish with nuts and chopped mango pieces and enjoy the tastes.
