Herby Tabbouleh

A tabbouleh is a salad of Bulgur Wheat, where the wheat is soaked over night rather than being cooked. This is very easy to make and is a wonderful accompaniment to tagines and stews.

This dish is also trivial to make, you simply have to remember to soak the bulgur wheat the night before — then it's just a case of assembling the tabbouleh.

Herby Tabbouleh

Ingredients:

140g (5oz) bulgur wheat, soaked in cold water overnight
1 red onion, finely chopped
2 tomatoes, seeds removed, finely diced
2 large bunches of flatleaf parsley, coarsely chopped
1 bunch of mint, coarsely chopped
1 bunch coriander leaves, coarsely chopped
juice of 1 lemon
4 tbsp extra-virgin olive oil

Method:

Drain the bulgur wheat and place into a large bowl. Add the other ingredients and stir until well combined. Season, to taste, with salt and freshly ground black pepper.
