Weight Watcher’s Creamy Tomato Shrimp Pasta!!!

Hello everyone. We are expecting our first snowfall here tomorrow in Fargo, ND and I’m glad I won’t be here for it…

Makes 6 servings: 1 cup  5 smart points per serving

Ingredients   [ For 7 to 8 people ]    [   Preparation time : 22 minute  –  Cooking time : 35 minutes  ]

  • 3 tablespoons of butter
  • 2 lbs of shrimp
  • 1 cup of tomatoes
  • ½ cup green onion
  • 2 tablespoons of chili powder
  • ½ cup of parsley
  • 1 cup of milk
  • ½ pound of rotini pasta

Preparation Method

  1. Melt butter in a pot.
  2. Bring some water to a boil, and cook the pasta for 7 minutes.
  3. Add Shrimp and stir.
  4. Add tomatoes, parsley, green onions, and chili powder
  5. Stir.
  6. Add milk and pasta.
  7. Let simmer.
  8. Take the pot off the stove and let the pasta sit for 5 minutes. The sauce will become thick and creamy.
