These street style delicious gyros are an easy win for the big game…
Ingredients [ For 4 to 5 people ] [ Preparation time : 22 minute – Cooking time : 25 minutes ]
- 2, 15oz cans of chickpeas
- 1 heaping tbsp of garlic powder
- 1 heaping tbsp of onion powder
- 2 tbsp taco seasoning
- salt/pepper to taste
- 2 tsp extra virgin olive oil
- 2 beefy tomatoes, quartered
- 2-3 cups romaine lettuce
- 1 red onion sliced
- 2-3 tbsp Super Easy Vegan Tzatziki Sauce
- the handful of black olives
- a handful of sliced cucumbers
Preparation Method
ROASTED CHICKPEAS
- Preheat oven to 350F and line baking sheet with parchment paper.
- Drain and rinse chickpeas. Roll them out onto the prepared baking dish and pat them dry with a paper towel.
- Add oil and seasonings. Using a spatula, fork, or spoon, roll them around until evenly coated.
- Bake for 20 minutes.
GYRO ASSEMBLE
- Grab a pita and generously put 2-3 tbsp of the Super Easy Vegan Tzatziki Sauce on one side.
- Take a large spoonful of the roasted chickpeas and place them on top of the sauce.
- Pile on all suggested toppings, lettuce, tomatoes, onion, olives, cucumbers, and a dash more of salt/pepper if desired.
- Fold pita and proceed to shovel the gyro into your mouth.
- Repeat this for each gyro…
