Keto Pizza Casserole!!!

This Easy Keto Pizza Casserole Recipe is a fantastic dinner idea for anyone doing the Keto diet!  It doesn’t take much to whip this dinner up either.  You could even purchase the precut cauliflower bags they sell at Costco to make it that much easier.  I’m going to show you how to make it with a full head of cauliflower though.

Ingredients   [ For 14 to 15 people ]    [   Preparation time : 12 minute  –  Cooking time : 35 minutes  ]

  • 1 Large Head Cauliflower, cut into small florets, rinsed and drained
  • Olive Oil, to coat
  • 2 TBSP Garlic, minced
  • 1 TBSP Onion Powder
  • 1 TSP Basil
  • 1 TSP Oregano
  • 1 TSP Parsley
  • 1 ½ C No Sugar Added Marinara Sauce
  • 18 Pepperoni Slices
  • 2 C Mozzarella Cheese
  • Italian Seasoning, optional
  • Salt and Pepper, to taste

Preparation Method

  1. PREHEAT Oven to 400 degrees.
  2. In a 9×13 Baking Dish toss cauliflower with olive oil, garlic, onion powder, basil, oregano, and parsley.
  3. Arrange in a single layer and roast for 25-30 minutes, until light golden brown.
  4. Remove from oven and spread marinara sauce evenly over the top of the cauliflower.
  5. Top with shredded cheese and Italian Seasoning if using.
  6. Place Pepperoni slices over the cheese.
  7. Put back in the oven for 10-15 minutes until cheese is melted.
