Here we are already one week into 2017; Christmas and New Year celebrations just a distant memory. I am finding that as I get older each year, time seems to get quicker and quicker – definitely a great excuse to make the most of life!
I purposely didn’t give myself a new years resolution to stick to a diet. I have made that mistake every year for a number of years now and the moment I eat something I shouldn’t, I feel like I’ve failed and I eat everything in sight. So instead, I have been eating healthy food and just making a bit more of a conscious effort to not eat so many sweets/chocolates/crisps. It is going well! I like to base my healthy eating on the Slimming World Plan. It allows you to eat as much of certain foods as you want to, so you never go hungry – perfect for me!
I find that the only issue with Slimming World is that it can take quite a while to prepare and cook meals, so here are three of my really quick and simple recipes that can be cooked within minutes. Although I am not a vegetarian, I do enjoy vegetarian food and think that it can be as good or even better than a Meal with meat.
- Rice, sweet potato and asparagus – This meal is completely free on Slimming World
Firstly, I cut up a sweet potato into chunks. I placed them in a baking tray in a preheated oven (200°c), sprayed with frylight, seasoned with some salt and left to bake for about 25 minutes.
I very simply boiled some rice and finished off by steaming my asparagus for 5 minutes.
Slimming World have certain ‘speed’ foods that help speed up weight loss. There aren’t that many of them on this dish, so I finished off with a fresh speedy fruit salad.
2. Courgetti, pepper and halloumi – This meal is free on Slimming World, using Healthy Extra A for the halloumi
I started by washing and cutting up a red pepper. I sprayed fry light into a pan and placed the pepper pieces in on a medium heat.
Whilst the pepper is cooking, I cut up the halloumi and left to grill for 2 – 3 minutes – checking on it regularly.
Although I do have a vegetable spiralizer, I used pre-prepared courgetti as it is much more convenient. I fried it in the pan, alongside the pepper for the last minute.
3. Pasta salad with a sprinkle of parmesan – This meal is free on Slimming World, using Healthy Extra A for parmesan
This dish is my favourite and so so quick and easy. I literally put the pasta on to boil, prepare a small salad and place it all into a bowl and sprinkle on some parmesan. I usually have this dish two or more times a week as it is so tasty and prepared and cooked in minutes.
