Just layer the ingredients together and you’re ready to go with a layered cold taco dip that is going to be the hit of the party.  I’ve stolen this recipe from my stepmother, but added in the beans and spices.  I can remember times as a kid when we made this and attacked it–maybe on New Year’s Eve, or maybe just on a car camping or picnic trip.  These days, we make it for the Super Bowl or for a snacky dinner night when no one wants to spend a long time in the kitchen.

This easy taco dip is also a great make ahead recipe. We find that the flavors blend together over night and taste even better the second day!  That’s such a refreshing surprise when so many recipes tend to flop the next day. Not the case with this easy taco Dip Recipe. Just another reason we like to make this the night before and then take it as our party offering. It garners rave reviews.  The only adjustment we recommend if you are ahead of time is to keep the bacon separate and add it right before serving so that it doesn’t get soggy!

Easy Taco Dip Recipe Layers

It’s all about the layers!

This taco dip starts with a base of avocado, green onion (the white part), and black beans.  Then spread on the sour cream with taco seasoning mixed in, followed by your favorite salsa.  Top with cheese, bacon crumbles, black olives, and green onion (the green tops sliced up).

Our kids have even taken to this easy taco dip recipe. Most nights we try to make well-rounded easily family meals, but we have to admit on those exhausted parenting nights that creep up by the end of the week we have sometimes been feeding our kids nachos with guacamole or mango salsa or throwing together this taco dip.

Easy Taco Dip Recipe

Prep Time: 15 minutes

Total Time: 15 minutes

Ingredients

  • 3 avocados, cut into small pieces
  • 4-6 green onions, chopped with white part and green part separate
  • 1 c. of black beans, rinsed
  • 1 c. of sour cream
  • 1 tsp. chili powder
  • 1/8 tsp. garlic powder
  • 1 tsp. cumin
  • 1/2 tsp. salt
  • 1 c. salsa
  • 1 c. grated orange cheddar
  • 1 small can of sliced black olives
  • 4-6 slices of bacon, cooked and crumbled

Instructions

  1. Layer avocados, beans, and white parts of green onion in the bottom of an 8x8 inch pan.
  2. Mix spices into sour cream.
  3. Spread sour cream on top of avocado/bean/green onions.
  4. Pour and spread salsa over sour cream.
  5. Sprinkle top with cheese, olives, green part of green onion, and bacon crumbles.
  6. Serve with your favorite tortilla chips.
