Gourmet Sandwich Ideas for Summer Picnics

There’s no better way to enjoy the summer air than to go for a picnic. If you’re tired of boring picnic fare, why not spice things up with some gourmet sandwiches? A delicious Sandwich is the best way to take your picnic from drab to fab, and it’s tasty to boot! Here are some gourmet sandwich ideas to try at your next summer picnic:

1. Muffuletta

Start by roasting slices of eggplant, zucchini, onions, and mushrooms at 450°F for 20 minutes or so, flipping halfway, until tender. Season with salt and pepper and let cool slightly. Next, take thick slices of bread and spread each slice with a layer of goat cheese. Top with roasted vegetables and sandwich two slices together to create your sandwiches. Serve warm.

3. Coconut Shrimp Sandwiches

Start by combining ½ cup panko breadcrumbs with ½ cup shredded coconut, salt, and pepper in a shallow bowl. Dredge large peeled shrimp in cornstarch then dip in beaten egg and coat with the coconut mixture. Fry the shrimp in hot oil until browned then serve on sandwich rolls with mayonnaise and hot sauce. Add fresh cilantro and scallions, if desired, to cool things down.

4. Caprese Sandwich with Bacon

Because everything is better with bacon, this Caprese sandwich gets a tasty upgrade. Start by slicing sandwich rolls in half and spread both sides with fresh basil pesto. Add slices of fresh mozzarella and tomato then top it off with crispy bacon and enjoy!

5. Roasted Chickpea Gyro

If you’re looking for something with an ethnic flair, these roasted chickpea gyros are a tasty (and vegetarian-friendly) option. Start by roasting chickpeas with olive oil, paprika, salt, and pepper then sandwich in pita pockets with homemade tzatziki sauce, red onion, and sliced tomatoes.

6. Fresh Lobster Rolls

These lobster rolls are best with fresh lobster, but you can use canned or frozen lobster in a pinch. Chop the lobster into large chunks and toss with mayonnaise, diced celery, red onion, lemon juice, salt, and pepper. Spoon the lobster salad into toasted sandwich rolls and enjoy!

7. Tuscan Tuna Salad Sandwich

This Tuscan Tuna Salad is like nothing you’ve ever tried before. Start by blending tahini, Greek yogurt, lemon juice, and olive oil into a smooth dressing then toss with flaked tuna, olives, and sundried tomatoes. Spoon the mixture onto a piece of crusty bread and top with fresh arugula, sliced avocado, and sliced cucumber. Sprinkle with feta and top with another slice of bread to serve.
