Beefy Corn Chip Pie
Servings: 6
Ingredients:
- 1 pound ground beef
- 1 medium yellow onion, chopped
- 2 (15-ounce) cans pinto beans, rinsed and drained
- 1 (9.75-ounce) package corn chips
- 2 (10-ounce) cans enchilada sauce
- 2 cups shredded cheese
Instructions:
- Preheat the oven to 350°
- Cook the beef in a large skillet until browned, breaking it up with a wooden spoon, then drain the fat.
- Stir in the onions and beans and cook until the beans are heated through.
- Sprinkle all but 1 cup of the corn chips in the bottom of a 9×13-inch baking dish.
- Spread the meat mixture over the chips and top with the enchilada sauce and cheese.
- Sprinkle the remaining chips on top then bake for 15 to 20 minutes until hot and bubbling.
Easy Cheeseburger Pasta
Servings: 8
Ingredients:
- 1 pound penne pasta
- 1 pound ground beef
- ¼ cup butter, chopped
- ½ cup all-purpose flour
- 2 cups milk
- 1 ½ cups beef broth
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 2 (14.5-ounce) cans diced tomatoes, drained
- 3 ½ cups shredded cheese
- ½ cup sliced green onion
Instructions:
- Bring a large pot of salted water to boil then add the pasta.
- Cook the pasta to al dente, about 8 to 10 minutes, then drain and set aside.
- In a large Dutch oven, cook the beef over medium heat until browned then remove to a bowl and drain the fat.
- Reheat the Dutch oven with the butter then whisk in the flour.
- Cook for 2 to 3 minutes until browned then whisk in the milk in a steady stream.
- Stir in the beef broth, mustard, and Worcestershire sauce then bring to a boil.
- Cook for 2 minutes to thicken then stir in the tomatoes and simmer, covered, for 5 minutes on low heat.
- Add the cooked pasta and beef along with the green onions then stir in half the cheese.
- Sprinkle the remaining cheese on top then remove from heat and let stand, covered, until the cheese is melted.
Sausage Stroganoff with Noodles
Servings: 4 to 6
Ingredients:
- 12 ounces wide egg noodles
- 1 pound ground pork sausage
- 8 ounces sliced mushrooms
- 1 medium yellow onion, chopped
- 3 cloves minced garlic
- 1 ½ cups beef broth
- ¼ cup all-purpose flour
- ¾ teaspoon paprika
- Salt and pepper
- 1 cup sour cream
- Fresh parsley, chopped
Instructions:
- Bring a large pot of salted water to boil then add the noodles.
- Cook the noodles to al dente, about 8 to 10 minutes, then drain and set aside.
- Cook the sausage together with the mushrooms, onions, and garlic in a large skillet over medium heat until browned.
- Stir in the beef broth, flour, paprika, and salt.
- Bring to a boil then simmer for 2 to 3 minutes until thickened.
- Remove from heat then stir in the sour cream.
- Serve the sausage stroganoff over the noodles with fresh parsley to garnish.
