Warm Up with These Cold Weather Comfort Foods

Keeping warm in the winter can be tough, but nothing warms you up faster than a hot meal. Serving your family a healthy and hearty meal doesn’t have to take hours. With these cold weather comfort foods, you can have a hot and healthy meal on the table in under an hour.

Beefy Corn Chip Pie

Servings: 6

Ingredients:

  • 1 pound ground beef
  • 1 medium yellow onion, chopped
  • 2 (15-ounce) cans pinto beans, rinsed and drained
  • 1 (9.75-ounce) package corn chips
  • 2 (10-ounce) cans enchilada sauce
  • 2 cups shredded cheese

Instructions:

  1. Preheat the oven to 350°
  2. Cook the beef in a large skillet until browned, breaking it up with a wooden spoon, then drain the fat.
  3. Stir in the onions and beans and cook until the beans are heated through.
  4. Sprinkle all but 1 cup of the corn chips in the bottom of a 9×13-inch baking dish.
  5. Spread the meat mixture over the chips and top with the enchilada sauce and cheese.
  6. Sprinkle the remaining chips on top then bake for 15 to 20 minutes until hot and bubbling.

Easy Cheeseburger Pasta

Servings: 8

Ingredients:

  • 1 pound penne pasta
  • 1 pound ground beef
  • ¼ cup butter, chopped
  • ½ cup all-purpose flour
  • 2 cups milk
  • 1 ½ cups beef broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 2 (14.5-ounce) cans diced tomatoes, drained
  • 3 ½ cups shredded cheese
  • ½ cup sliced green onion

Instructions:

  1. Bring a large pot of salted water to boil then add the pasta.
  2. Cook the pasta to al dente, about 8 to 10 minutes, then drain and set aside.
  3. In a large Dutch oven, cook the beef over medium heat until browned then remove to a bowl and drain the fat.
  4. Reheat the Dutch oven with the butter then whisk in the flour.
  5. Cook for 2 to 3 minutes until browned then whisk in the milk in a steady stream.
  6. Stir in the beef broth, mustard, and Worcestershire sauce then bring to a boil.
  7. Cook for 2 minutes to thicken then stir in the tomatoes and simmer, covered, for 5 minutes on low heat.
  8. Add the cooked pasta and beef along with the green onions then stir in half the cheese.
  9. Sprinkle the remaining cheese on top then remove from heat and let stand, covered, until the cheese is melted.

Sausage Stroganoff with Noodles

Servings: 4 to 6

Ingredients:

  • 12 ounces wide egg noodles
  • 1 pound ground pork sausage
  • 8 ounces sliced mushrooms
  • 1 medium yellow onion, chopped
  • 3 cloves minced garlic
  • 1 ½ cups beef broth
  • ¼ cup all-purpose flour
  • ¾ teaspoon paprika
  • Salt and pepper
  • 1 cup sour cream
  • Fresh parsley, chopped

Instructions:

  1. Bring a large pot of salted water to boil then add the noodles.
  2. Cook the noodles to al dente, about 8 to 10 minutes, then drain and set aside.
  3. Cook the sausage together with the mushrooms, onions, and garlic in a large skillet over medium heat until browned.
  4. Stir in the beef broth, flour, paprika, and salt.
  5. Bring to a boil then simmer for 2 to 3 minutes until thickened.
  6. Remove from heat then stir in the sour cream.
  7. Serve the sausage stroganoff over the noodles with fresh parsley to garnish.
