Step By Step Way To Make Egusi Soup


Egusi soup is a popular Nigerian soup made with ground melon seeds, vegetables, and seasonings. Here's a simple recipe to make Egusi soup:


Ingredients:

- 2 cups Egusi (melon seeds)

- 1/2 cup Palm oil

- 1 onion, chopped

- 3 cups Water or stock

- 2 cups Spinach, chopped

- 1 tablespoon crayfish

- 2 stock cubes

- 1-2 Scotch Bonnet or Habanero peppers, chopped (optional)

- Salt to taste


Instructions:


1. Toast the Egusi: Heat a dry skillet over medium heat and add the Egusi seeds. Stir constantly until lightly toasted and fragrant, about 5-7 minutes. Remove from heat and allow to cool.


2. Grind the Egusi: Using a spice grinder or food processor, grind the toasted Egusi seeds until they become a fine powder. Set aside.


3. Cook the onions: Heat the palm oil in a large pot over medium heat. Add the chopped onions and sauté until translucent, about 3-4 minutes.


4. Add the ground Egusi: Add the ground Egusi to the pot and stir well to combine with the onions and palm oil.


5. Add the water or stock: Pour in the water or stock and bring to a boil, stirring constantly to prevent lumps from forming.


6. Add the vegetables: Add the chopped spinach, crayfish, stock cubes, and chopped peppers (if using). Stir well and reduce the heat to low. Cover the pot and simmer for 20-25 minutes, stirring occasionally, until the soup has thickened.


7. Season with salt: Taste and adjust seasoning with salt as desired.


8. Serve: Egusi soup is typically served with a side of fufu, pounded yam, or rice.
