Ingredients

  • 500 grams of tomatoes
  • ½ onion
  • garlic clove
  • ½ bell pepper
  • bay leaf
  • Salt
  • pepper olive oil

Step-by-step preparation

  • Fill a pot with water and bring the tomatoes to a boil for 1 minute, take them out and put them in cold water. With this, you will be able to remove the skin easily.
  • Once the skin is removed, chop the tomatoes into small cubes and set aside.
  • Chop the onion, pepper, and garlic very small and fry them in a pan with olive oil. Cook them until the onion and garlic are golden, but take care that they are not going to burn.
  • Add the chopped tomatoes, bay leaf, and a pinch of salt and pepper. Add 2 glasses of water or, if you prefer, you can use vegetable broth.
  • Lower the heat to half and let it boil for 30 minutes. Stir from time to time and check that it is well salted.
  • After this time, you can do 2 things: leave the tomato soup as it is, with pieces of the vegetable, or blend it. If you decide to blend it, remove the bay leaf first.
  • Once blended, you will have your delicious and easy tomato soup ready.

TIPS FOR A DELICIOUS TOMATO SOUP

  • I recommend that you use very ripe tomatoes, which have a lot of juice.
  • You can pass the soup through a strainer if you want an even finer texture.
  • When serving your dish, you can decorate it with fresh parsley or basil leaves. You can also add bread croutons and of course, a drizzle of extra virgin olive oil.
  • A little grated Parmesan cheese works great.
  • You also have the possibility of chopping half an extra tomato, passing it through a pan with olive oil over low heat for a couple of minutes, and putting it on the plate when eating.
  • If you like spicy, you can add a piece of red chili.
  • As a side dish, fresh bread is perfect. One or two slices that you can dip as you take it.
