The 2024 edition of Once Upon a Kitchen not only celebrates gourmet cuisine but also acts as a melting pot of diverse culinary philosophies. Massimo Bottura, a legend in the Italian culinary scene, and Virgilio Martínez, known for his innovative use of Peruvian biodiversity, will blend their distinct flavors and styles to create an unparalleled dining experience.

About Chef Massimo Bottura

A restaurateur and entrepreneur for more than thirty years, Massimo Bottura is one of the most innovative and influential personalities on the world’s gastronomic scene. In 1995, he opened his restaurant Osteria Francescana in his hometown Modena. The restaurant’s numerous awards – three Michelin stars in 2012 and first place in The World’s 50 Best Restaurants list in 2016 and 2018 – helped to assert the chef’s reputation globally. Over the years, other projects were born that are now part of the Francescana Group: in Italy, Franceschetta58, Cavallino, Gucci Osteria Firenze and the guesthouse Casa Maria Luigia, and around the world, Torno Subito Dubai and Gucci Osteria in Beverly Hills, Tokyo and Seoul. In 2015, together with his wife Lara Gilmore, he founded Food for Soul, a non-profit association and cultural project aimed at combating food waste and social isolation. In recognition of his humanitarian and environmental commitment, in 2020 Bottura was appointed Goodwill Ambassador for the United Nations Environment Program and Osteria Francescana was awarded the green Michelin star.

About Virgilio Martínez

Virgilio Martínez is a Peruvian chef recognized for representing and promoting Peru, its biodiversity, and its landscapes on the world gastronomic scene. He was born in Lima on August 31st, 1977. He is the founder and owner of the restaurants Central (Lima, Peru), and MIL (Cusco, Peru) and co-creator of the organization Mater. Virgilio grew up in Lima with a passion for exploration, discovery, and knowledge. Through cooking, he found a way to express curiosity and limitless creativity which are now the traits that define him perfectly. After having traveled and worked in kitchens all over the world, Virgilio felt the need to return to Peru, connect with its territory, its people, and its culture, and create his restaurant and concept. Thus began a new journey and in 2008, Central was born.
