Foods for Light Luncheons

A light, sophisticated luncheon is a great way to amuse while providing your visitors a healthy meal. A range of fresh produce, leans meats and entire grains provides well-rounded nutrition and all are ideal for light dishes. Outfit up easy dishes with creative garnishes for a quite discussion and keep portion sizes little by serving foods on various small plates.

Salads

Dress mixed baby greens with olive oil and a flavored vinegar, such as balsamic or raspberry, and construct a Salad on top of the greens. Fresh peach slices pair well with spiced almonds and blue cheese, or attempt avocado and grapefruit. Toss seasoned veggies together for a salad without eco-friendlies and garnish with pimientos, scallions or sprigs of fresh natural herbs. Zucchini, tomatoes, asparagus, yellow and orange bell peppers and artichoke hearts make a vibrant salad.

Grains

Use little grains and keep dishes easy for a light lunch. Incorporate prepared and cooled couscous with fresh herbs and a flavored vinaigrette and stuff inside small tomatoes or large cherry tomatoes. A Tabouli salad made with bulgur supplies and exotic touch, while orzo tossed with asparagus, lemon juice and fresh herbs is refreshing. Make mini-biscuits with entire grains, herbs and Parmesan cheese or serve basic bruschetta or breadsticks made with entire wheat bread.

Vegetables and Fruits

Add a twist to a traditional vegetable tray by providing small dishes antipasto design on a huge tray. Add cold, prepared chicken to a salad made with rice noodles or angel hair pasta or make a classic Nicoise salad with tuna.
