Recently Green Goddess health and wellness contacted me asking if I would like to try one of their products ‘Mum on the Run’ superfood, Energy boosting powder. They sent the powder with a recipe for a ‘Mum on the Run’ Energy Balls and after trying it out I can confirm they are delicious so I thought I would share it on here! This recipe makes twelve 35-37g energy balls that can be kept in an air tight container in the fridge for up to two weeks. I was not provided with the nutritional content for each ball but I have calculated myself that each ball contains around 176 calories. They take around twenty minutes to make and do not require cooking. You will need a food processor.
Ingredients:
- 100g Hazelnuts
- 100g Desiccated Coconut
- 100g Dates
- 50g Mum on the Run
- 3Tbsp Coconut oil
- Squeeze of honey (I used around 2 Tbsp)
Method:
- Firstly blend the nuts in a food processor until they form a fine crumb like texture
- Next add all the other ingredients and whizz for three minutes
- Form into balls (I used weighing scales to ensure each ball was the same/similar size) then refrigerate. Enjoy!
