Aubergine bake.

Pinterest has become a best friend of mine for food and fitness —> recipes that I want to create, elaborate bakes that would cost a million to make but look incredible and workouts that are guaranteed to let me eat said bakes and still have abs.

I’m not very creative when it comes to food so for me pinterest allows me to step out of my comfort zone and try something new.

Today it was an Aubergine bake with a few added ingredients –> I try.

The first thing that I loved about this recipe is that it looked very cheap to make with very few ingredients. It also looked quite simple and although it was slightly time consuming, I don’t mind being in the kitchen.

The first thing to do is to grill the aubergines for a couple of minutes until there is some colour –> once they’ve got a few lines, put these to one side. Next fry off the onion and garlic, add the mushrooms and any other vegetables and soften. Once softened, add the chopped tomatoes and simmer for 10 minutes.

Once cooked, it’s time to assemble the dish –> think lasagna / moussaka! Put a layer of auberguine on the bottom of the dish and then top with the tomato mixture –> continue until you either run out of mixture or room!

Now there’s two ways to finish this dish –> vegans, leave as it is. Vegetarians / dairy eaters –> top with some grated cheese.

Put the dish in the oven for 10 minutes (or until the cheese is as melted as you like and the mixture has a bit of a crisp) and serve This was before I tried to dish up:

My favourite thing about this recipe is how versatile it is –> the aubergine provides the layers but you could also use butternut squash sheets or courgettes. You could also add anything you wanted into the tomato sauce –> or even use a different sauce!

I will definitely be using the base of this recipe and trying some new things so watch this space!
