Meatless Monday - Steamed Chips (fries) in the oven!

Yes, I steamed my chips. Don't you? You must be thinking I am a bit crazy right now but they are amazing! Quick and easy, and healthier than deep frying them. Read on for the method :) It was inspired by this recipe I found online.

First attempt:

As regular readers will know, my parents gave me a food processor for Christmas and since then, pretty much most my experiments involve my new toy. Making chips was no exception. I bought a specific blade that chops your potatoes into smallish chips shapes. Check it out below with my step by step.




Next step is to steam the potatoes for about 10-15 minutes, I use my rice cooker. I prepped a couple of cloves of garlic by squashing them still in their skin and I picked sole rosemary from the garden.


I heated up the oven as high as I could, which was about 250 Celcius with some oil in a baking tray. Once hot, I popped the chips in directly and turned them over in the hot oil. Don't wash the chips once they come out of the steamer, the point is that the steaming brings out the starch which dries and crisps up.


Quick spot check half way through, they seemed to be crisping up.


After about 20 minutes this was the result:


Here you can see the rosemary and the garlic which give them a fun flavour, I do love rosemary and potatoes! YUMM. Only concern I have is that the food processor cuts them a little fine for my taste, though I do love a crispy thin chip occasionally :)


Second (quick) attempt:

I made them again quickly after work as these don't take long at all. They go nice and soft in the middle due to the steaming and crispy on the outside without burning even though they are cooked at such a high temp. The reason you steam instead of boiling is the starch coming out that I mentioned earlier. I do wait for a bit before putting the potatoes in the oven so that they cool down and steam is not longer coming off them. I had meant to keep these for my husband when he got home, but I ate them all quickly myself! LOL.


My most recent attempt, first time I hand cut the chips:

To counteract the fact I found them a little thin, I decided to chop up some potatoes by hand. You can peel your potatoes if you want to, but I prefer to keep the skins on but I scrub them well before.


Back into the steamer.


Again garlic and rosemary.


Crushed the garlic a little again.


Here are the steamed chips.


I heated up the oven to about 250 Celcius again and this time to use less oil I added some baking paper. This time I also fancied a little heat in my chips so I added a dried red chilli with my mix of olive oil and sunflower oil, garlic and rosemary.


I added the chips and then tossed them through the oil by folding the paper and rubbing them a little.


I then spread them out in the pan to crisp up properly.


The half-way check on how things are going, looking good :)


They do look better :)



And the final result. Wonderfully browned and crispy with a touch of heat from the chilli. They look pretty amazing right? And very little oil was used, so they are healthier than your average chips.




And being half English, I fancied the wonderful comfort food that is a chip butty with some Sriracha sauce :)

Pitching this as a Meatless Monday might be a little cheeky but so worth it!
