3 Easy Vegan Recipes You Can Make in Under 10 Minutes

This easy vegan recipes are perfect for those who would like a quick and healthy meal solutions. We usually have this dish to accompany a meat dish and rice. However, whenever We are on a diet, We would have these dish with scrambled eggs or on its own. The good thing about this recipe is, you can use up what ever vegetables you have in the fridge. On top of that, the vegetables we used in this recipes are fairly cheap to buy. It usually takes us less than 10 minutes to prepare and cook the vegetables.

Stir Fry French Beans (Serves 2)

We love how versatile the French Green Beans are. You can find it just about in any style of dishes. They appear in stir fries, curries, roasts, salads. Which isn’t really surprising given that they are one of the better tasting vegetables out there. They are also easy to grow, all they need is a warm, sunny weather and a well drained soil.

Ingredients

250 grams      French Green Beans

1 clove            Garlic – minced

1/4 tsp             Ginger – minced

1 tbsp              Mushroom Soy Sauce

1 tbsp              Vegetable Oil

Salt & Pepper to Taste

Method

Cut beans into smaller pieces.  Heat vegetable oil in a pan, Add beans and  fry for a couple of minutes on high heat. Add ginger and garlic and fry for another 1 minute before adding Mushroom soy sauce, salt and pepper to taste. Remember not to add too much salt as mushroom soy sauce is already salty. Cook for another 1 minute.

Tips: If you don’t have mushroom soy sauce, you can replace it with normal soy sauce. Also, if you have Oyster sauce you can use that one instead as well- just remember that Oyster sauce is not Vegan.

Tips: Make this this more fragrant by adding a few drops of good quality Sesame Oil

Tips: If you like your Beans Super crunchy, reduce initial cooking time

Teriyaki Mushrooms (Serves 2)

Mushroom is a great vegetable/fungus in the sense that, they are great at absorbing flavours. Mushrooms are also a great alternative for meat as it does tend to have a meat like taste. This teriyaki recipe is easy and great if you prefer a dish with robust flavour.

Ingredients

250 grams      Button Mushrooms

1/4 cup           Kikkoman Soy Sauce

1/4 tsp            Ginger – minced

1 tbsp             Brown Sugar

1/4 tsp            Coarse Black Pepper

1 tbsp             Olive Oil

Method

Teriyaki Sauce : Boil Soy Sauce, Pepper, Ginger, Sugar and a little salt in a saucepan. Simmer and cool.

Cut mushrooms into half and saute with garlic until the mushrooms turn brown. Add Teriyaki Sauce and cook for 1 minutes until the teriyaki sauce reduces down.

Tips : Avoid washing the mushrooms with water or it will become soggy. Clean mushrooms with papertowels

Tips : Teriyaki Sauce can be prepared and kept in the fridge for up to 2 weeks. Preparing a larger batch definitely helps reduce cooking time.

Tips : Button mushrooms can be replaced with other mild flavoured mushrooms such as champignon, inoki,oyster, swiss brown or portobello

Sweet and Salty Corn (Serves 2)

Corn in a can is one of the most underrated pantry staples. You can do so much wonder with this humble vegetable, all you need is some creativity and a bit of Pinterest searching! . This sweet and salty Corn recipe is not only perfect as a side dish, it is also pretty yummy to be eaten as a healthy snack on its own. This recipe is one Ida have grown up eating. It has helped wonders in helping us manage our sugar craving. Instead of reaching for the chocolate, we have corn instead.

Ingredients

1 can            Sweet Corn (Any brand)

1 clove          Garlic, sliced

a dash of olive oil

1 tsp              Butter

a pinch of sugar

a pinch of salt

Method

Remove corn from the can and drain the water. Heat frying pan with a dash of olive oil and butter. Add corn and fry corn for 2 minutes. Add garlic, salt and sugar to taste.

Tips : If you like a bit of heat, you can add pepper or chilli flakes

Tips : You can also make this in the microwave, but you wont get the charred bits of course. Mix all ingredients (minus olive oil) in a microwave safe bowl. Heat on high for 1 minute.
