Ready in 60 minutes
Ingredients:
- Coconut oil for greasing
- 1 cup almond meal
- ¼ cup linseed meal
- ½ cup coconut flour
- ¼ cup rice flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 4 large eggs
- 4 tablespoons of cup raw honey
- ½ cup Remedy Drinks Wild Berry Kombucha
- Berries for garnishing
- Raw honey for drizzling over the top
Preparation:
- Preheat the oven to 200°C. Grease a 9-inch round baking pan with coconut oil.
- In a large mixing bowl, sift the almond meal, linseed meal, coconut flour, rice flour, baking soda, and salt. Whisk well to combine.
- In a medium bowl, beat the eggs, honey, and kombucha together.
- Pour the wet mixture into the dry ingredients and whisk well. The mixture will be thick.
- Spoon the mixture into the prepared baking pan and bake for 40 minutes, or until the top is golden brown, and a toothpick inserted comes out clean.
- Carefully remove the cake from the pan and leave it to cool.
- Once the cake has completely cooled, top the cake with the berries, drizzle honey over the top, and serve!
