Three-Tin Tomato, Turmeric & Coconut Dahl - National Vegetarian Week



We love dahl in this house, although I usually spell it dal. It can also be spelled daal or dhal and it's really hard to find a definitive answer, but as this isn't my Recipe, I shall stick to calling this tomato, turmeric and coconut dahl.

My favourite dal or dahl, is made with spinach and coconut and I love it so much I never try making variations of it, but this one looked so good. I was won over.

This recipe comes from The FODMAP Friendly Kitchen by Emma Hatcher.  

What is FODMAP?


Like me you may have seen that title and be wondering what FODMAP is? It's actually short for Fermentable Oligosaccharides, Disaccharides, Monosachharides and Polyois.

Quite a mouthful, isn't it? Those are the scientific names for a group of molecules in food that some people have trouble absorbing, which results in IBS and other stomach complaints. If you follow a diet low in FODMAP, then you can help to alleviate or completely eradicate the symptoms and that's what this cookbook is all about. 




This cookbook isn't a vegetarian cookbook, but there are a quite a lot of veggie and vegan recipes in it as well as a good guide to the diet and what ingredients are safe to use, which I imagine would be really helpful. 

Thankfully I don't have any stomach problems, but I still enjoyed having a read of this and just learning a bit more. There may be someone in your family or circle of friends who this may find this cookbook really helpful and I can safely say we can all enjoy the recipes.

Three-Tin Tomato, Turmeric & Coconut Dahl
A fabulous weeknight dinner that won't break the bank, made with store cupboard ingredients. This dahl, is simple to make, healthy and delicious.
Ingredients
  • 300g brown rice
  • 1 tbsp coconut oil
  • 1 tbsp olive oil
  • 2 tsp cumin
  • 2 tsp turmeric
  • 1 tsp ground coriander
  • 1 x 300g tin green lentils, drained and rinsed
  • 1 x 400g tin chopped tomatoes
  • 1 x 400ml tin coconut milk
  • a good grinding of salt and pepper
  • 2 tbsp fresh coriander, finely chopped
  • 140g kale, chopped
Instructions
1. Boil your rice in a pan over a medium heat until it is soft but still has a little bite. Check out the packet instructions.2. Now make the dahl. Place the oil and coconut oil in a large pan and heat for 1 minute, then add the spices and cook for a minute or two until golden. Add the drained lentils along with the coconut milk and tomatoes, then cover. Cooke for 20 minutes or until slightly reduced. Stir regularly and add a little water, if you think it needs it.3. Remove from the heat, season with salt and pepper and add the fresh coriander. 4. Serve with the rice and lightly cooked kale.5. Enjoy!

This recipe is quite high in fat. If you' re watching your weight, I would suggest, skipping the coconut oil and opting for a light version of the coconut milk. Your local supermarket should have a few options.
