Ingredients:
Carrots
Corn
Green Pepper
Red Pepper
Onions
Extra firm tofu
Sweet peas
Bean Sprouts
Green Beans
Soy sauce
Sriracha
Riced Cauliflower- got a bag from Trader Joe's that looks like:
Dice the veggies.
Add a tablespoon of olive oil. First, sautée the onions, bean sprouts & green breans and wait a couple of minutes. Then add the carrots, peas, corn, and peppers.
At the same time, I used a separate pan and cooked the tofu until golden brown. Add to the mix.
Add 1-2 tablespoons of soy sauce.
Add Sriracha depending of personal spice preference.
Add fried egg (optional)
