What CalPac is Cooking for Hispanic Heritage Month

Happy Hispanic Heritage Month!

September 15th – October 15th, CalPac and the rest of the nation celebrated Hispanic Heritage Month!  This time recognized and honored the diverse histories and backgrounds of members of the hispanic community.  California Pacific Charter Schools is proud to have a strong presence of hispanic representation both among our student body and our faculty. 

Earlier this month, we shared Three Ways to Celebrate Hispanic Heritage Month, and we thought we would close with one more way to celebrate – preparing and sharing a meal!

Food is a central part of hispanic culture – the preparation and consumption of recipes passed down from generation to generation is an event centered in creating community.

As we wrap up celebrations of Hispanic Heritage month, we encourage you to gather with your community – whether that is your family or friends – and follow along with the Chile’ Relleno recipe below!  We’d like to say a big thank you to our middle school student who shared this piece of their culture with us!

Chile' Relleno

Peppers, stuffed with cheese, fried, and topped with
a fresh tomato sauce!

The Basics

Recipe Type: Main Dish

Difficulty: Intermediate

Number of Servings: 3

Prep Time: 45 Mins

Cook Time: 2 Mins

Cooking Temp: Stovetop – Medium/High

Ingredients

  • 3 of Puebla’s poblano pepper
  • Milk creme
  • 5 eggs
  • 2 diced Tomatoes
  • White Onions
  • Cheese (mozzarella jack is prefered)
  • 1 cup of water
  • Canola or vegetable oil

Preparation

Step 1: Wash Peppers and cook on grill till dry skin is achieved

Step 2: Cut open peppers to spoon out seeds and peel off skin and the put in cheese and close the cut.

Step 3: Blend diced tomatoes and onions and cup of water for 2 mins

Step 4: Warm up stove to half of the full temp and add oil when fully warmed up.

Step 5: Crack 3 large eggs in a bowl. Once cracked, separate the yolk from the egg whites without popping yolk.

Step 6: Add the milk creme to the egg whites and mix with electric mixer at level 2 or 3 mix.

Step 7: Dip chile in egg whites and creme bowl and then fry for 2 mins.. Then plate. 

Step 8: Pour a little tomato sauce and onions on plate with rice and beans and other sauces and spices you like to eat.

There you have it!  A delicious traditional recipe to wrap up Hispanic Heritage Month!  You can add some fresh avocado and cotija for some extra flare, or even throw on your favorite hot sauce.
