Brown sauce

Grate onion and carrot. Make a paste of the flour with a little stock, add onion and carrot, and the remaining stock, and bring to a boil, stirring to prevent it from burning. Simmer for 20 to 30 minutes. Strain if desired. If a thicker Sauce is required, the amount of flour should be increased.

White sauce

  • 1/2 pint of nonfat milk
  • one level tablespoon of cornflour or plain flour
  • two drops of Worcester sauce
  • salt
  • pepper

Take enough milk from 1/2 pint to blend flour into a paste. Boil the remainder and add the Worcester sauce, salt, and pepper. Pour boiling milk on the paste and stir well. Return to the saucepan and simmer until it thickens.

Parsley sauce

  • 1/2 pit of non-fat milk
  • one level tablespoon of cornflour or plain flour
  • salt
  • pepper
  • one dessertspoon chopped parsley

Blend flour with a little of the milk to form a paste. Heat remaining milk and seasoning until it boils., pour onto flour mixture, stir well and return to heat and simmer until it thickens. Before serving stir in the chopped parsley.

Bread sauce

  • 2 – 3 oz fresh breadcrumbs
  • one small onion
  • 1/2 pint of non-fat milk
  • salt
  • pepper
  • 2-3 cloves

Peel the onion and gently simmer with the breadcrumbs, milk, cloves, and seasoning for 20 minutes. Leave in a warm place until required. Remove onion and cloves, and stir before serving.

Alternatively, the onion may be finely chopped, and only the cloves removed before serving. This gives a more lightly flavored sauce.

Mint sauce

  • 6 tablespoons of vinegar
  • 1 teaspoon of sugar
  • 1 tablespoon finely chopped mint
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper

Sprinkle chopped mint with sugar and pour on 1 teaspoon of boilling water. Leave to cool. Stir in vinegar, salt and pepper. Make the sauce some two hours before it is required so that the vinegar may take up the flavor of the mint.
