Baby Banana Cookies

Ever since Asher started eating solids, he has wanted to feed himself. And I have always loved his little sense of independence. However, on busy mornings when I don't have time to clean oatmeal from his hair, inside his diaper, on the floor, table, highchair, and wherever else it has ended up, I opt for more of a "finger food" breakfast, mainly of bananas and some other fruit.

Asher is getting bigger and moving around so much! His bear crawl is on point. But with his growth and movement (and lack of interest in breastfeeding), he needs heavier meals. Raising a plant-based baby, oatmeal is a staple breakfast, so I knew I had to find a better way to get it in him!

Enter: Baby Banana Cookies. I found this recipe and was ecstatic because they contained ingredients I was comfortable feeding my baby, but because they took only about 10 minutes to make! Perfect for this new mom that is very busy chasing her bear-crawling kiddo around the house all day!

I have to say; these cookies were a hit with Asher too. He loves blueberries, so I decided to make banana-blueberry and banana-coconut cookies. Of course, his favourite was the blueberry, and of course, it did not solve my problem of seeking a low-mess breakfast. Oh well. You win some; you lose some. But I would count this as an overall win.

You can flavour these cookies any way you want. You can get creative with carob powder, bananas & peanut butter, or keep it plain with just fruit. These cookies are your oyster! The base recipe is bananas & oats. Super simple, right?! What are your baby's favourite foods?! I would love to hear any fun ideas!
