Roasted Asparagus – Tastes like candy!

Before you read this post, there is a recipe you JUST HAVE TO TRY! Jeanette Hurt (author of The Unofficial ALDI Cookbook) recipe for Roasted Asparagus – balsamic vinegar and olive oil make the asparagus crispy with a hint of sweetness. Jeanette says “It makes the asparagus taste like candy. Once you cook your asparagus this way, you’ll never cook it any other way—it’s that good. And it’s easy, too.” If you are a beginner cook or well versed in the kitchen, you will love this recipe!

Of course you can buy fresh asparagus at a very good price at ALDI. Have you visited your local ALDI grocery store lately? You’ll find lots of new fabulous products at very reasonable prices. It started out as Albrecht’s grocery store in 1913 in Germany. Eventually, the Albrecht brothers took over from their mama, and they turned it into Albrecht Discount, or ALDI, for short. In 1976, they opened their first store in the United States in Iowa. Today, the company’s on track to become the third largest grocery chain in the United States, with more than two thousand stores open now.

About the author

Today I had the pleasure of talking with Jeanette Hurt, author of The Unofficial ALDI cookbook. According to Forbes, Jeanette is an award-winning writer and author of a dozen books, including the critically acclaimed Drink Like a Woman (Seal Press 2016) as well as The Joy of Cider (Skyhorse Publishing 2019)…She has written about spirits, cocktails, wine, and travel for dozens of different publications, including Esquire.com, Wine Enthusiast, The Four Seasons Magazine, Tales of the Cocktail and SuperCall.

Jeanette has been a long-time fan of ALDI. She tells a wonderful story in her cookbook about how she was introduced to this grocery store by her mother. She continues to shop there because of the wide variety of excellent produce, cheeses, meats and more at fabulously low prices.

Woo your love with wine and cheese! Jeanette recommends:

Pictured above  (starting at the top-left and moving clockwise), Hurt suggests ALDI’s truffle cheddar, chevre with lemon zest and black pepper over walnuts, 1000-day aged gouda, honey and dried cherries, menage sheep, goat and cow milk cheese, olives, marissa sheep’s milk cheese, raspberries, rhubarb and gin Valentine’s Day cheese (center). Hurt also recommends ALDI’s cauliflower crackers, olive spread, and her own Cannoli Dip (a recipe featured in The Unofficial ALDI Cookbook), and heart shaped truffles. To toast, she poured Prosecco and Cabernet Sauvignon, both available at ALDI. 

One thing I love about this ALDI cookbook is that Jeanette suggests substitutions if you can’t find an ingredient. She told me she encourages cooks to be creative. For example, her sisters Chocolate Peanut Butter Ice Cream Pie (in the cookbook) calls for ALDI marshmallow fluff, but the fluff is only sold during the holidays. So Jeanette gives a substitution recipe to make fluff with marshmallows. She encourages cooks to be creative and add more or less of an ingredient to suit their taste.
