The Corn Pudding recipe from my new novel "Kanika's Burdens"


Here's the recipe from one of my principal characters " Grandma Lilymae." She's the grandmother of my main character, Kanika Witherspoon, in my new novel Kanika's Burdens.

Corn Pudding

2 Cans Cream Corn (15 oz) Del Monte or Green Giant
1/2 Stick of Butter
3 eggs
3/4 cup sugar
2 tbsp flour
1 tsp lemon extract
1 tsp nutmeg
1 tsp baking powder
1/4 tsp salt

Melt butter, add sugar, flour, nutmeg, salt and baking powder.
Mix well, add eggs and lemon extract. Stir in cream corn.
Bake at 400 degrees for 45 minutes. Use glass square pan.
