No Bake Coconut Oatmeal Bird’s Nest Cookies
No bake cookies are a family favorite! I mean, we have been eating them forever! We never get tired of them and they are just so yummy. And they just happen to make really cute bird’s nest cookies for Easter.
When I decided to make these cute little bird’s nest cookies I realized I only had two cups of oats so I substituted sweetened coconut flakes for one cup of the oatmeal. I thought my Nanny had made them this way before but my mom informs me that no she did not, so I don’t know who made them with coconut or if I just made that up Anyway, they turned out yummy and all that was left by that evening was crumbs.
Instead of using 3 cups of oats I used two cups and one cup of coconut. If you’re a coconut person I think you will like love these, even if you’re not a coconut person you should give them a try.
Ingredients:
- 1 stick of butter
- 2 cups sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/2 cup peanut butter
- 2 cups quick oats
- 1 cup sweetened coconut flakes
- 1 tsp vanilla extract
- 1 bag of egg whoppers or similar chocolate egg candy
Directions:
- Gather and measure out all of your ingredients before getting started. Place wax paper on two large cookie sheets and set aside.
- In a saucepan melt your butter, add the milk, sugar and cocoa powder and mix well. Keep stirring often.
- It will come to a rolling boil and once that happens time yourself one minute, keep stirring mixture often during the one minute.
- After 60 seconds promptly remove from heat and add your vanilla extract and peanut butter and mix well
- Add your oatmeal and coconut and mix until combined.
- Once combined, use a cookie scoop or a spoon and place cookies on wax paper.
- Once your cookies, or bird’s nests, are on the wax paper quickly add your Whoppers or another choice of colorful egg candy before the cookies cool.
These are so cute and delicious; they will be a great addition to any Easter celebration.
