This recipe really celebrates summer, it is light, fresh and zingy. Ideal for breakfast muffins as so refreshing.
Ingredients:
- 1 1/4 cup flour
- 1 dessertspoon baking powder
- 1 cup sugar
- 3 tbsp butter
- Zest of 1 lemon
- 2 eggs
- Juice of 1 lemon
- 2 tbsp poppy seeds
- 2 tbsp chopped fresh mint
Method:
- Place the flour, baking powder, sugar, butter and lemon zest in a bowl and mix together till a bread-crumbs texture forms.
- Then add the eggs and lemon juice and beat for a minute till the mixture becomes light and fluffy.
- Stir in the poppy seeds and chopped mint.
- Transfer dessertspoons of the mixture into muffin cases and bake in a preheated oven of 180 degrees Celsius for 15 minutes until slightly golden.
