Lemon, Poppy Seed and Mint Muffins Recipe

This recipe really celebrates summer, it is light, fresh and zingy. Ideal for breakfast muffins as so refreshing.

Ingredients:

  • 1 1/4 cup flour
  • 1 dessertspoon baking powder
  • 1 cup sugar
  • 3 tbsp butter
  • Zest of 1 lemon
  • 2 eggs
  • Juice of 1 lemon
  • 2 tbsp poppy seeds
  • 2 tbsp chopped fresh mint

Method:

  1. Place the flour, baking powder, sugar, butter and lemon zest in a bowl and mix together till a bread-crumbs texture forms.
  2. Then add the eggs and lemon juice and beat for a minute till the mixture becomes light and fluffy.
  3. Stir in the poppy seeds and chopped mint.
  4. Transfer dessertspoons of the mixture into muffin cases and bake in a preheated oven of 180 degrees Celsius for 15 minutes until slightly golden.
