Copycat grilled Pizza Palace Salad

I grew up in a reallllllyyyyyy small town. When I say small you probably aren’t going to understand.  I went to school with the same 65 kids from preschool to senior year.  We had 1 red light in town.  1.  In this said itty bitty town, there was a restaurant called the Pizza Palace.  They had the best food!  One of my favorites was their Salad with French Fries - the “Grilled Chicken Salad.”  It consists of greens, hard boiled egg, onions, mozzarella cheese, marinated chicken breast and your choice of dressing.  If I remember correctly, I think it also came with a breadstick (not just any breadstick… the most delicious friggin’ breadstick of all time…especially if you dunk that bad boy in ranch dressing).  Anyway, I’m getting off track here (do all celiac’s get off track when bread is brought into the conversation????) So, since I no longer live anywhere close to this Pizza Palace, I make this perfect salad at home (probably more than my husband would like me to – just kidding, he likes it just as much as I do).

For my chicken I use 2 boneless skinless thighs and I pound them super thin.  Once they’re pounded out, I sprinkle Mrs. Dash salt free original seasoning on top and bottom to make sure they’re completely coated (I’m weird with chicken - it has to be completely seasoned for me to eat it).  Since it was over 100 degrees outside I gave the “grilled french fries” idea a shot.  I did not want to heat up my kitchen on a day where my A/C is already running like crazy and can’t keep up.  I sliced a potato into thin rounds and placed them on the grill while the chicken was cooking.

Once my chicken was cooked, I took the chicken and potato rounds off of the grill.  I sliced my potato rounds into french fries and sliced my chicken into bite sized pieces.  Then I layed my chicken on aluminum foil, put the french fries on top of my chicken, and sprinkled with mozzarella cheese.  On the left in the picture above is my daiya mozzarella and on the right is my hubb’s real mozzarella.  I left that on the grill for a few minutes until the cheese was melty.

I had assembled my salad while the chicken and french fries were cooking.  I used romaine lettuce, shredded some carrots, sliced sweet onion, and sliced up a hardboiled egg.  Once my chicken/french fry/mozzarella cheese was all melted together i placed it right on top of my salad and then topped with daiya ranch dressing.  My husband used bleu cheese.

That is one heck of a salad.
