Vegan “Loaded” Sweet Potatoes

Who doesn’t love a good sweet potato? I actually know a lot of people that don’t like them, but I love them – especially when it includes avocado and Teriyaki sauce… wait what? Trust me, as weird as you think the mix of food in this meal looks, it’s actually delicious, and it made the house smell like Thanksgiving/ Asian food – wasn’t mad about it.


Ingredients:

  • 1 bag of sweet potatoes
  • 1 avocado, diced
  • 1/2 cup chopped scallions
  • 1 teaspoon Salt & Pepper
  • 1/4 cup and 1 tablespoon of teriyaki sauce
  • Sesame seeds

Directions:

First, preheat your oven to 425 degrees Fahrenheit and poke multiple holes into your Sweet Potatoes. Then bake them for about 35-45 minutes. Afterwards, cut each sweet potato right down the middle and scoop out the interior – being sure not to “mash” it because you want to be able to cut them into little squares. In a bowl, add the sweet potato squares, diced avocado, salt, pepper and chopped scallions in the bowl. Pour the teriyaki sauce in and mix. Fill each little sweet potato “boat” with the teriyaki mix and bake at 350 degrees Fahrenheit for 20 minutes. Once done, pour a tablespoon of teriyaki over the sweet potato boats and sprinkle the sesame seeds on top. Enjoy
