Anyways, similar to that Meal, I always opt for Chipotle at lunchtime if I didn’t bring anything to work – veggie bowl with Fajita Veggies, lettuce, mild and Medium Salsa and a large scoop of guacamole, please. Last week I got it for lunch like three times and was almost embarrassed (emphasis on the “almost”) because the workers know who I am, now; I desperately needed to start making my own burrito bowls.
And that’s what I did, while also making my own guac.
For my meal prep, I made five containers filled with romaine lettuce, cut up fajita veggies, medium salsa and the guacamole. Super easy, yet super satisfying.
Homemade Guac recipe is as follows:
Ingredients:
- 2 avocados
- 1/2 red bell pepper, chopped
Directions:
Literally just cut the avocado, take the pit out, scoop out the interior, add the Bell Pepper and mash/mix. Hella easy. Now, where’s my margarita?
