It’s almost Summer! Jk, it’s barely even halfway through Spring, but Summer is close enough. So, with Summer close by, who wouldn’t want some Coconut in their life? It always makes me feel like I’m going on vacation, so yes please!
For my birthday, I decided to make something to bring into work to celebrate – which were these little truffle things. They are super easy (because I only make easy food) and super delicious. There are a few ways to make this your own, I just made this Whole 30 compliant, but to make it a little sweeter, sugar is needed.
Ingredients:
- 1 banana
- 1/4 cup sunflower seed butter
- 1/4 cup cocoa powder
- 2 tablespoons of coconut shavings
- 1 cup of shredded coconut
- 2 teaspoons of nutmeg
- 2 teaspoons of cinnamon
Directions:
First, mash the banana and add the Sunflower Seed Butter, cocoa powder and coconut shavings; mix well and store in the refrigerator for about 2.5 hours. Once that’s over, on a plate, mix the shredded coconut, nutmeg and cinnamon. Take some of the mix and make into little truffle balls – then roll those in the shredded coconut mix. Once they’re all coated, store in the fridge until you feel like eating them
