Chickpea Nuggets

Have you tried those MorningStar chick’n patties? They’re pretty amazing right? Well, I wanted to try and make my own so I knew exactly what was in them. Lately I’ve been pretty paranoid about what’s been in my food for no particular reason, just because.

I wanted to keep this recipe super simple so all I used were some Chickpeas, Chickpea flour and gluten free (vegan) breadcrumbs – hello, protein! These taste amazing, and I’m not only saying it because I made them. I ate them as chicken nuggets and as chickpea patties; I placed one on a bun with some kale and ketchup, I and was in chickpea heaven.

Ingredients:

  • 2 cans of chickpeas, drained and rinsed
  • 1 cup of chickpea flour
  • Gluten-free and vegan breadcrumbs
  • Olive oil for frying

Directions:

Once your chickpeas are drained and rinsed, put them in a food processor and get it to the point where it looks almost like hummus but also not like hummus. Put that in a bowl, add the flour and mix. Shape into small little nuggets or patties and brush with Olive Oil. Then dip into the breadcrumbs. Once they all are breadcrumb-ed up, fry them with olive oil on a pan for around 10-15 minutes, flipping halfway through. Serve as patties, nuggets or however you like enjoy!
