Mini Calzones… Because carbs

Being a vegan means you have to give up pizza, right? WRONG, so so so so very wrong. Now, “vegan” pizza might not taste as good as normal pizza does (to the non-vegan folk anyways), but it’s still pretty damn good – it also makes up for not having normal pizza. So, before the Super Bowl, I decided to make calzones because why not?

I pretty much ate these entire two plates to my house, however my boyfriend’s brother tried also them, not knowing they were vegan and really really liked it – and he literally only eats Papa Gino’s and Taco Bell. See, vegan food can taste good :)

I based my recipe on this one, but changed a few things – so I can’t take the credit. Also please don’t judge my fancy dinner plates…

Ingredients:

For Dough:
– 3 cups of all purpose flour
– 1/4 tsp salt
– 1 tsp melted coconut butter
– 1.5 package of dry yeast
– 1 cup of warm water

Filling:
– 1 cup of cooked spinach
– 1 cup of Daiya vegan mozzarella cheese
– 1 cup of tomato puree
– Pinch of salt and pepper
– 1/4 tsp garlic powder
– 1/4 tsp onion powder
– 1/2 tsp oregano
-2 tsp of olive oil for brushing the tops

I put all the ingredients for the dough in a medium bowl and formed the dough with my bare hands (dramatization at its finest) – then I covered it and left it for around an hour (after about 45 minutes, I preheated the over to 450 degrees, Fahrenheit). To make the filling, I mixed the tomato puree, salt, pepper, both powders and oregano together. Once the dough was twice the size, I pulled it apart into 13 pieces and stretched each one out to look like a pizza crust. I took one pizza crust, put a small portion of the tomato sauce on it, added a tablespoon of the Daiya cheese, and topped it off with spinach. I, then, folded it over, like a calzone, and closed it by pressing the edges down with a fork. I did the same for the rest, brushed the tops with just a little olive oil, and baked for 25 minutes.

They came out slightly burnt, and a little hard, (think I might have overcooked them, but whatever, I already told you I like all foods a little burnt) but they were so delicious – perfect snack for a football game, even though football season is over. Enjoy!
