Who doesn’t like waking up to french toast? I actually don’t, really, because I’m not that big of a fan of it, but I wanted to try something for breakfast – since most of the stuff I cook (and post on my blog) is for lunch/dinner. So I tried this recipe. Banana French Toast with Oats, is basically the jist of it.
I made it on the snow day we had last Monday, so it was actually sort of comforting – eating warm food on a freezing day where I don’t leave the house, except for coffee. This recipe calls for oats, so the end result is sort of like baked oatmeal. By the ways, I absolutely hate all things oatmeal (oatmeal cookies, actual oatmeal itself, oatmeal breakfast bars, etc.) but I actually didn’t mind it.
Also, don’t mind the gross-looking bananas. My lesson learned, place the cut bananas on top AFTER baking, not before; it just shrivels them up and makes them just too banana-y, if you get what I mean.
But if you’re stuck in the house this weekend, waking up to -11 degree weather (Thanks, New England) I recommend this recipe.
Ingredients:
1/2 ripe banana, mashed
1/4 cup unsweetened vanilla almond milk*
1 Tbsp. nut butter** (optional, but recommended)
1 tsp. Maple Syrup (or other liquid sweetener)
1/2 tsp. ground cinnamon
1 slice of hearty bread, cubed
1/4 cup quick oats
Directions:
Preheat oven to 375. Spray the Dish you’ll be working with; I just used a pie dish because I made two servings (one for me and one for me…. I mean my boyfriend). Then I added the banana, almond milk, nut butter, maple syrup, and cinnamon to a bowl and mixed. Afterwards, I added the bread cubes, and made sure they soaked up everything. Add the oats and stir. Put mixture in the dish and bake for 20-25 minutes. Remove and THEN add banana slices. Pour syrup over and enjoy :)
