Baked Sweet Potatoes with Curry Powder


I discovered Sweet Potatoes a few years ago, when I bought them to make puree for my young baby.  I thought of cooking some, for us, with curry powder and we immediatly loved it.  It's a nice and quick sidedish that you can serve with a variety of main dishes.


- Two large, washed and unpeeled sweet Potatoes, cut into two and then in quarters
- Madras Curry powder
- Fine black pepper
- Cayenne (or chili) powder
- Vegetable oil of your choice
- Salt


Preheat oven at 400F.

Put the quartered sweet potatoes in a large mixing bowl.

Sprinkle with Madras curry (to taste), pepper, cayenne powder and salt (to taste).

Add 2 tbsp of oil and mix well, with a wooden spoon, until all the quarters of potatoes are coated with the spices and oil.

Cover a baking sheet with aluminum paper.  Arrange the potatoes on the sheet and bake 20 minutes (do not overcook, otherwise they will become too soft).

When they're finished cooking, broil them 2-3 minutes to give them a nice color on top.
