From new students to those who are already making a mark on the industry, we share a story from one of our Durban campus students who has defied all odds to study a Diploma in Patisserie.

Michaela Smith was born deaf and throughout her life has worked hard to realise her aspirations and reach her goals. After school, she spent time travelling and found herself working in a bakery. It was during this time that she realised she wanted to pursue a formal qualification as a pastry chef.

“Studying with Capsicum has been very rewarding and Chef Maynard in particular has been extremely helpful and patient. It hasn’t been the easiest to get around in terms of following the lectures and I didn’t realise how precise and scientific the art of patisserie can be. Having said that, I learnt the foundations and feel confident that I can make a success in the industry.

In 2015 I was encouraged to enter the South African Avocado Growers Young Chef’s competition, which required us to design a recipe that included two avocados with a South African twist, which I won.

I am currently in Johannesburg gaining some work experience and I have been offered exciting opportunities which I will be able to explore as soon as I finish my studies.”
