#MeatFreeMondays: Teriyaki Chickpea Dumplings

Teriyaki Chickpea Steamed Dumplings served with a Spicy Lemon grass and Chamomile Green Tea Broth

 

Serves 4

Green tea broth:

Ingredients

  • 750ml Brewed Green Tea
  • 3g Dried Chamomile flowers
  • 5g Lemongrass
  • 30ml Soya Sauce
  • 10ml Honey
  • 1clove Garlic, crushed
  • 5g Fresh Ginger, Julienned
  • 2 Red Chillies, thinly sliced
  • Salt and pepper to taste
  • Fresh parsley to serve

Method:

  1. Combine all the ingredients and bring to a gentle simmer to allow all the flavors to infuse for 10min
  2. Set aside and allow to stand until needed to cook the dumplings

 

Teriyaki chickpeas

Ingredients:

  • 200g Chickpeas, cooked
  • 85ml Teriyaki sauce
  • 5ml Sesame seeds
  • Pinch of white pepper

Method:

  1. In a pan combine the teriyaki sauce with the chickpeas and white pepper. Cover and let simmer until the teriyaki is thick and glazes the chickpeas +- 10 min
  2. Remove from the heat and mix in the sesame seeds. Allow to cool before filling the dumplings

 

Dumplings

Ingredients:

  • 200g White bread flour
  • 5g Instant yeast
  • 125ml Milk
  • 10g Butter
  • 5ml Castor Sugar
  • Pinch of Salt

Method:

  1. Sift flour into a bowl and allow to stand on top of a warm oven to heat the flour gently
  2. Gently bring milk to scolding point and then allow to cool to body temperature
  3. Mix the instant yeast granules in a bowl with the sugar and a ¼ of the milk into a paste
  4. Make a well in the center of the flour and add the yeast. Gently cover the yeast with flour and wrap the bowl. Leave to stand in a warm place to allow the yeast to ferment. Until it is foaming
  5. Mix the rest of the milk, butter and salt into the flour mixture and form a dough
  6. Knead the dough for 10min until smooth and shiny. Place in a bowl and cover with plastic wrap. Leave in a warm place to proof until double in volume
  7. Knock back the dough and weigh out 30g balls, roll out the dough balls and fill with teriyaki chickpea mixture. Pinch the dough closed around the filling towards the centre. Make sure they are well sealed.
  8. Poach or steam the dumplings in the green tea broth
