Kitchen Wisdom Apricot & Garlic Marinade is quick, easy & delicious! I grew up with countless versions of this BBQ Sauce & Marinade in my home as well as the homes belonging to a number of Italian American friends. I often jokingly refer to this as Italian BBQ Sauce. This Apricot & Garlic sauce is a tantalizing pairing for chicken, sausage, onions, potatoes and mushrooms on the BBQ. During the cooler months, I use it as a marinade for baked chicken or braised fennel; it is also delicious for braising leeks. The ingredients are few and all one needs is a spoon and small bowl.

Yields enough marinade to coat 4 Chicken Thighs or 2 large thick sliced Zucchini
5 ounces gluten free Apricot Jam
3 teaspoons Lemon juice
2 tablespoons Extra Virgin Olive Oil
¼ teaspoon Garlic Powder
¼ teaspoon Black Pepper
1/8 teaspoon Salt
(optional) Crushed Red Pepper or Cayenne to taste
Whisk all of the ingredients in a small bowl. Set aside to stand for a few minutes, allowing for the flavors to marry.
