Recipe: Amazing Chicken Marinade - Chicken Kabobs

The Selection
As mentioned in the last post, for my 2nd year of unique weekly Sunday dinners, I would like to plan ahead for dishes that need to marinate longer than a few hours (I always hit the grocery store on Sunday morning).
Instead of using whittlerz.com, I did a google search for 'recipes that require marinades'. One of the results was a page on allrecipes.com that contained pictures and links to marinades. Many were for specific types of meat. Many claimed to be the best, so it made for a tough choice. I landed on the Amazing Chicken Marinade recipe.
OK, now what type of a chicken meal based on a marinade. Something I have yet to make are kabobs (meat and vegetables on a stick). Along with the kabobs I decided to add couscous and grilled asparagus.
On Sunday morning it was hard to tell if the marinade was doing anything. I was not sure if the chicken was supposed to change color or absorb the marinade. I figured I would have to wait for the kabobs to hit the plate to find out.
I purchased several vegetables to place on the kabobs with the chicken: red bell pepper, green bell pepper, red onion, yellow chili peppers, zucchini squash, yellow squash, and grape tomatoes. I did not think to much about a strategy for placing the vegetables and chicken on the wooden sticks. I just tried to alternate colors as much as possible.
The outdoor barbecue is not working, so I cooked the kabobs on a stove top grill plate. Hitting the kabobs with direct barbecue fire may have been better.

I went to the store Saturday evening to get a few of the needed ingredients for the marinade. The marinade was pretty easy to prepare. I cut chicken breasts into small pieces and placed all in a plastic bag in the refrigerator over night.
