The Selection

I continued this week searching for another Recipe that would require marinating.  I started my search on google and came across a Marinating 101 page.  To my surprise, only brisket required marinating for 24 hours.  Other meats or fish could be marinated overnight, but in most cases only 2 - 4 hours were needed.  New lesson learned on my journey!!

I have already made a couple of brisket recipes, so I needed to look in another direction.  I decided to go back to whittlerz and check for meats that I have not tried previously.  I tried searching for recipes for london broil.  Close to 40 recipes were found on whittlerz.  I chose the recipe on Epicurious as it indicated the meat could marinate up to 24 hours.

I decided to roast red potatoes to complete the meal.


The Preparation

I had most of the ingredients already with the exception of the meat.  I made a quick trip to the store on Saturday night to pick up the london broil.  The marinade was relatively straight forward to make.  Into the fridge it went for the night.  The recipe indicated the meat should be cooked on an open grill.  My outdoor grill has been off limits since some local critters decided to make it a home.  I ended up cooking the london broil in a pan on the stove.

I also cut up some red potatoes and a white onion and placed them in a baking dish with olive oil and tossed with salt, pepper, parsley, and oregano.  These were covered and put in the oven at 400 degrees for 1 and 1/2 hours.


The Outcome

Interesting.  After marinating for about 24 hours in a mixture that included balsamic vinegar, the london broil sure did taste like balsamic vinegar.  It was also still a bit tough.  I thought marinating would tenderize the meat.  In this case, it did not happen.  Maybe cooking on a grill would have made the difference.  

This will be the first and last attempt at london broil.
